Meet my Son....


Meet my son, Robert William! He is 4 years old. He is in Pre K 4 right now. He loves school.
He is very clever. He amazed me with these new words he says. New phrases he learns in school.
Robert is very spoiled. He gets what he wants.LOL thats what he thinks.LOL
He is my life! The reason of my existence. My love, my life, my world. I love you son! Always and forever, I will be here for you.

Let's Learn how to cook Bibingka *(:>*

This delightful breakfast or snack is similar to a cake, but is unique to the Philippines. Traditionally baked with a special apparatus and a mainstary of the Christmas holidays, our recipe is adapted for the modern kitchen and delicious any time!

Ingredients you will need:

3/4 cup-sugar1-1/4 cups-coconut milk3-eggs2 cups-flour1/2 tsp-salt4 TBsp-baking powder1/2 cup-grated cheese,1/2 cup-butter1/2 cup-fresh grated coconut


Mix sugar and coconut milk, then add beaten eggs. In a separate bowl mix the flour baking powder and salt. Combine the two mixtures and pour into a pan lined with banana leaf.Add the cheese and bake in 375? over for 25 minutes, basting with butter every five minutes. When fully baked sprinkle with sugar and add grated coconut to surface. Serve while still warm.

Dinner for Tomorrow?!!

I was just browsing on some recipes and I came across this one. I always watch "Take Home Chef" on TLC every Friday. He is one hot Australian Chef!!!

I am thinking on making this one tomorrow, if I get off early from school. If not then I will definitely make this on Friday night.

Steamed Whole Tilapia with Ginger and Shallots

Ingredients:
Two 1 2/3-pound/750-g whole tilapia fish, scaled, cleaned and gutted1/3 cup/25 g julienned, peeled fresh ginger14 ounces/400 g Chinese long beans1/4 cup/60 ml dry sherry1 teaspoon/4 g granulated sugar1/3 cup/70 ml tamari1/2 teaspoon/3 ml toasted sesame oil1/3 cup/30 g julienned shallots (preferably green shallots)1/4 cup/60 ml peanut oil1/2 bunch fresh cilantro, leaves onlySmall pinch of freshly ground white pepper

Method:Place the fish on a chopping board. With a sharp knife, cut three diagonal slits into the side of each fish, then cut three diagonal slits in the opposite direction to make a diamond pattern. Turn the fish over and repeat on the other side.Place one fish in each of two baskets of a large bamboo steamer. If necessary, trim the tails of the fish so that the fish fit in the baskets. Gently rub half of the ginger over the fish and into the slits.Place the beans in the steamer baskets alongside the fish, wrapping the beans to surround the fish. Bring 2 inches/5 cm of water to a boil in a large wok over a medium-to-high heat.Place one steamer basket in the wok over the boiling water. Pour 2 tablespoons/30 ml of sherry over the fish. Stack the second basket atop the first basket, and drizzle the remaining 2 tablespoons/30 ml of sherry over the fish.Cover the steamer baskets with the lid and steam the fish for about 12 minutes or until the fish is cooked through. You can tell that the fish is cooked when the meat is white through to the bone, which will be exposed by the cuts. If fish is still translucent, replace the lid firmly and steam for another minute or so.Remove the steamer baskets from the wok. Transfer the beans to the chopping board and slice diagonally into 2-inch/5-cm pieces, then sprinkle them around a serving platter. Using a metal spatula, carefully transfer the fish to the platter.Sprinkle the sugar evenly over the fish. Combine the tamari and sesame oil in a small bowl, then drizzle it over the fish. Sprinkle the fish with the remaining ginger and half of the shallots.In a small saucepan, heat the peanut oil over high heat until it begins to smoke, about 3 minutes. Slowly and carefully drizzle the hot oil over the fish. Garnish with remaining shallots, the cilantro and pepper, and serve immediately.

A Great Monday

Today was just great. Aside from my good grade in my management class, I was not really that bombarded with paperworks at work. I was just organizing files. I took out the closed files to make room for the new accounts we opened.

My boss was not there today so I was at ease. I was making phone calls make appointments for clients to come in. It is part of my job and I like "bothering" clients.LOL

It is also a pretty day today in New York. After the snow storm, the sun finally came out.LOL It felt like spring already..mmmmm its right around the corner. I cannot believe it is almost March!!! Time passes by so fast. Dont you think? It worries me sometimes..LOL I am not even half way there in accomplishing my goals for 2008, career wise!

A Lazy Sunday

Sunday, Sunday!! I woke up very late today, 11 am..I was up till 2 am last night because I was watching tv. Woke up late then I made coffee....mmmmm Hazel nut!:) I then took a shower and was preparing to do my laundry. After laundry, I ironed my work clothes. I switched purses and have my things ready for tomorrow.

Right now, I am just relaxing and waiting for the Oscars to be on tv.

One busy Saturday

Hello Everyone..

I made this one just for my day to day activities. God willing, if I am not too tired by the time I get home, I promise I will write a post here on what I did on day to day basis.

Lets start with today.Hmmm What did I do? Well I went to work this morning till 1 pm this afternoon. It was an easy day. I was just filing stuff and finishing paperworks. I have made an outline for our networking meeting on Monday with the "big bosses". I have to take over the meeting in behalf of my boss who is on vacation right now. I have to report what we did last week, how many sales we booked and how many appointments were set up for the month.

After that, I went to get my nails done. I had it painted dark brown with flowers as the design. It is cute! Right after that, I went to the mall looking for a coat. I did not find any that I really like so I went home with nothing. I stayed home after that and been working on my Accounting project which will serve as our final exam. I have finally finished the 6 ratio analysis of Walmart. That is the company that I have chosen for my project.

Then I went to my favorite chatroom for a while to chat but there was no topic that interests me so I left. I have been watching tv since then until now.hehe. TV ADDICT!

Well, that is it for now. I will write more tomorrow. See ya then
